Stuff I've Been Eating #2

Hey everyone! I hope you all enjoyed your long weekend if you had one. Today I'll be sharing some more meals with you that I've been eating over the past week. There's nothing too exciting but I've been eating pretty well while staying on a strict budget. 


Walmart's produce is pretty hit or miss for me but I've been having some pretty good luck recently. They had small avocados for about $.80 so I've been enjoying avocado toast once in a while and I always pair it with some fruit.


Despite it being 800 degrees outside, I got it in my head that I really wanted some chick'n noodle soup. Luckily I had all of the ingredients (bite sized pasta, soy curls, carrots and some of the vegan chicken better than bouillon). Present me thanks past me yet again. It was delicious and comforting and filling and I think I'll be eating soup more in the coming weeks.


I've been eating oatmeal a lot for breakfast. I have a large bag of oats and a big bag of pecans that I had gotten from Costco (of course, lol). I cook the oats and top it with banana (which is one of my favorite budget items and I basically count them as a pantry item because they are so inexpensive), cinnamon, pecans, hemp seeds that I also had on hand, and maple syrup (can you guess where I got my jug of maple syrup? 😂). It's delicious, hearty and very budget friendly. 


I'm still on my granny smith apple kick so I still have one nearly every day and on this day I finished up a container of strawberries as well.


This meal looks pretty sad but it was actually really delicious! I used up some of my pasta and the broccoli that I had in my freezer and made a simple pasta with broccoli dish with garlic, olive oil and nooch. Simple but delicious!

And that's what I've got for you today! I'm looking forward to cooking some more interesting meals as I have the time so why not at least make myself interesting, creative meals with what I have. My goal is to have some more fun dishes to share next week 😊 I hope you all have a wonderful week and I'll see you again this weekend! 💜

    1. Thanks! I think I can thank past Sarah for that 😅 once I deplete my pantry I think the meals will look different and that's ok! It'll be a new challenge. The van Gogh experience was so amazing 🥰

  2. You're doing great! I know it can be hard to stay on budget. I love bananas, too. When they get too ripe for me to want to eat them as they are I freeze them for smoothies or for other things (baking, pancakes, etc.), and it works out well. I'm particular about bananas. They're so delicious for a few perfect days and then...freezer time. But they are one of the cheapest things to get, and they have lots of nutrients.

    I understand the soup thing--sometimes you just want something familiar and comforting. Looks like you're doing well taking care of yourself.

    1. Thank you! I'm trying and I think sometimes the stress and depression take over and I get lazy but I'm going to make it a goal to make nice, creative meals using the ingredients that I have!

      Bananas really are the perfect ingredient! I'm the exact same, I love them for a couple of days and after that, into the freezer they go! I also found a recipe for a mug cake/brownie that uses ripe bananas and it's SO GOOD so I've been saving a ripe banana for those as well. I'll share it the next time I make it!
